This BBQ dill cucumber wrap is amazing. Pack with tons of flavor, and has the creamy crunchy bonus of a dill cucumber coleslaw. All wrapped up in a tortilla that keeps everything from falling out.

BBQ and Slaw go together so well! This recipe is no exception because the saucy richness of the BBQ and the creamy cool crunchy slaw together are like fireworks going off on your tastebud. Yes, I know that sounds dramatic but it’s so good. That it’s hard not to rave about it!

This wrap is also perfect for a fresh summer bite. The dill in this recipe makes it taste bright and fresh, which makes it perfect for summer. You can also add a squeeze of lemon juice into the dill slaw to make it taste even more fresh and bright.

Step 1:In a large mixing bowl, mix all ingredients for the batter together EXCEPT for the water. Whisk together all the dry ingredients and add whisk in the water until smooth.

Step 2: Place bread crumbs into a large shallow bowl. Dip sliced cauliflower into the batter mix, tap off excess mixture and coat with bread crumbs.

Step 3: Place the breaded cauliflower onto a parchment paper lined baking tray and bake for 20 minutes. While the cauliflower bakes, mix all the ingredients for the cucumber slaw. Place aside for later.

Step 4: Brush BBQ sauce on the cauliflower on both sides to coat. Bake for an additional 20 minutes.

Assemble

My favorite part because you are one step closer to eating it! 😆

Assemble by placing one tortilla wrap flat on a cutting board, place a BBQ cauliflower steak on the middle, and stack a heaping spoonful of the Cucumber slaw. Close wrap by folding edges onto the center and ENJOY!
