Summer is here and its time for a delicious, creamy cucumber chilled soup. This soup eats very much like a gazpacho. It’s creamy and delicious but also, chilled which makes it perfect for hot summer days!

How To Make This Chilled Soup
Step 1: Prep all ingredients
Step 2: Blend all ingredients together. Serve Chilled.
Step 3: Garnish with chopped cucumber, a drizzle of extra virgin olive oil and a drizzle of watered down non dairy sour cream, with a sprig of fresh dill.

- 2 green onion
- 2 cup cucumbers
- 2 cup yogurt plain
- 2 tsp dijon mustard
- 2 tbsp extra virgin olive oil
- Salt & Pepper to taste
