Easy Blueberry Pancakes
When talking about pancakes, I feel like everyone has a specific preference. Whether, that comes down to fluffiness, syrup, toppings, butter or whipped cream. Whatever your preference may be, you just have to love blueberry pancakes. I don’t have a sweet tooth and I’m not even into breakfast foods believe it or not and even I love these easy vegan blueberry pancakes.
There is this misconception, this myth if you will, that fluffy vegan pancakes are not a thing. That all things made with flour and are vegan or somehow flat and dry. I’m not sure where this myth came from. It may have been from back in the day when vegan food was more complicated to make, with less options.
Whatever the case may be, that is not the case with these fluffy easy vegan blueberry pancakes. These delicious little pancakes are fluffy little clouds, bursting with blueberry and every bite.
Whenever I make these blueberry pancakes my two kids run to the table, because they just can’t resist. The delicious aroma of hot blueberry pancakes in the air is like no other in the morning. Or as my husband would say at lunch or dinner, because apparently breakfast is for anytime of day.
Customize it
As I always say this recipe can be customized, you can add different type of berries if you prefer. I like to swap out the blueberries occasionally for raspberries when they’re in season and really good. My daughter Mia and I just love raspberries, so raspberry pancakes are also delicious and I highly recommend you try it that way too.
Is it kid friendly.
This recipe is very kid friendly, and although I am not a fan of eating breakfast foods all that much. I do really enjoy making some yummy breakfast and feeding it to my picky children and watching as they enjoyed every single bite. These are also really fun to include your children in the process of cooking them, they would love it.

Easy Vegan Blueberry Pancakes

- 1 cup dairy free milk
- 1 cup all purpose flour
- 2 tbsp baking powder
- pinch of salt
- 1 tbsp sugar
- 2 tbsp vegetable oil
- 1/2 tsp vanilla extract
Extra
- 1/2 cup frozen or fresh blueberries

- In a large bowl mix all you dry ingredients not including the berries. Then add your dry ingredients and mix well.
- Cook about 3 minutes per side. Flipping when lots of open bubbles start to form.
- Repeat, stack pancakes and drizzle with maple syrup over top and all that is left to do is ENJOY!
