These Lentil Vegan Meatballs are so delicious! They are loaded with flavor and easy to make. Once you make the mix, it will be hard to resist not eating it just like that! You still have to form them and cook them but they the mix is so good, and everything already cooked so, feel free to eat a big spoonful and chalk it up to tasting for quality!

Main Ingredients

Shiitake Mushrooms: You can make these using regular button mushroom or portobello mushrooms but shiitake and hen of the woods are the tastiest in this recipe and since hen of the woods are hard to find shiitake are the next best thing!

Lentils: This is the base of the entire recipe! The lentils are the bilk of the recipe sort of speak.

Pecans: These can be taken out of the recipe completely or replace by another nut of your choice. This adds a nutty element that makes these lentil vegan meatballs more delicious.

Ritz Crackers: Oddly specific am I right? Any buttery style vegan friendly cracker will do. I use to make my non vegan meatballs with these instead of bread crumbs and when I made the switch to plant based I had to bring the crackers along for the into the next meatball recipe. It adds a special touch and flavor.

How To Make These Vegan Meatballs?

Step 1: Add onion into a pan with a touch of oil and saute until slightly soft. Add mushrooms and season with a pinch salt and pepper. Cook on medium high until lightly browned.

Step 2: Place cooked lentils into a large mixing bowl and add in the onion and mushroom mixture. Into the mixing bowl add in all the remaining ingredients EXCEPT for the flour and oil. Mix well and lightly mash mixture with a potato masher to help the mixture stick together. Do NOT turn the mix into mashed beans.

Step 3: Form mixture into heaping spoonful balls. Roll balls into flour, and fry in a small amount of oil until golden brown.

Serve: Serve alone or with marinara sauce with pasta and ENJOY!

  • 7 shitake mushroom tops chopped small
  • Small handful parsley chopped finely
  • 2 cup lentils cooked
  • 1/4 cup pecans finely chopped
  • 2 1/2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tbsp nutritional yeast
  • Pinch red pepper flakes
  • 1 tsp dry basil
  • 1/2 tsp oregano dried
  • 15 Ritz crackers crushed into crumbs

  • 1 cup all purpose flour
  • Oil for frying
