These easy pumpkin pancakes are so fluffy and so delicious. My kids request these pumpkin pancakes all year round. Good thing they sell canned pumpkin puree all year too. Otherwise what would I do? I love that these are kid friendly but also, making pancakes gets my little ones interested in cooking.

I don’t have to call the kids over into the kitchen for help, or ask for quality time. They hear that I am making these easy vegan pumpkin pancakes, or any pancakes and they come over to volunteer. Especially my little lady. She loves helping me make pancakes and my big guy who is 12 now, occasionally will whip up a batch of pancakes for him and he’s sister. No questions asked, its lovely. I don’t know what it is about pancakes, but I’m not complaining.

Crazy thing is I don’t even like pancakes myself. I make pancakes all the time for my little ones and husband but I never eat them myself. I’ve just never been a fan. I remembered begging my mom to make me something else for breakfast, whenever she was making pancakes for my brothers. She always did. Yes, my mom is awesome!

Do I need any special ingredients?

I wouldn’t really call this special, per say because they sell it all year round and chances are you have some in the cabinet already. Pumpkin puree, yes the stuff that you would use to make pumpkin pie. Make sure to get the pumpkin puree, not that pumpkin pie mix. That stuff is not what you want and will not give you the same result, because the pumpkin pie mix has all sorts of different ingredients, used in pumpkin pie. All we need is the pumpkin puree for flavor, not any extra levelers.

  • 1 cup flour I used all purpose
  • 1 cup unsweetened almond milk
  • 3 tbsp pumpkin puree
  • 3 tbsp sugar
  • 2 tbsp baking powder
  • 1 tsp pumpkin spice
  • 1/2 vanilla extract
  • Pinch of salt

  • In a large bowl mix all you dry ingredients. Then add your dry ingredients and mix well.
  • In a non stick pan at medium high height pour your batter approximately 1/4 cup at a time. Cook about 3 minutes per side. Flipping when lots of open bubbles start to form. Repeat until all batter is used.
  • Stack pancakes and drizzle chocolate over top and all that is left to do is ENJOY!
