Ever since I discovered cauliflower wings I have been obsessed with making every variation I can come up with like the jerk cauliflower wings, general Chick’n, and the list goes on. The point is I love cauliflower wings and I love casserole recipes. So, it was only a matter of time until I came up with a recipe that combined the both of those. Boy, am I glad I did that!

How To Make This Loaded Buffalo Casserole

Step 1: Preheat oven 350F.

Step 2: Boil cauliflower and potatoes for 10 minutes or until slightly tender. Drain and set into a large mixing bowl. Add in the remaining ingredients, except bread crumbs and leaving out 1/2 of the chopped vegan bacon to sprinkle over top later, mix well.

Step 3:Add mixture into a 8×8 casserole dish, level out and sprinkle with bread crumbs and vegan bacon over top. Bake covered with foil for 30 minutes.

Step 4: Uncover and bake for additional 20 minutes.

Serve Allow 10 minutes to set before cutting and ENJOY!

  • 3 cups potatoes peeled and cubed
  • 1 small medium cauliflower
  • 1 carrot peeled and cubed small
  • 1 stalk celery
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp smoked paprika
  • 4 slices vegan bacon chopped (I used litelife brand)
  • 1 cup buffalo wing sauce or 1/2 for less spice
  • 1/2 cup panko bread crumbs
  • 1/2 14 oz soft or silken tofu blended smooth
