South Western "Cheesy" Spring Rolls

In honor of spring which will be here soon even though we are about to get hit with a blizzard tonight. I decided to make spring rolls. I use to love the Chili's South Western egg rolls but can't eat them anymore so I decided to come up with this recipe for my own. These can be fried to make them more authentic. I choose not to because I have been eating a lot of fried food lately. These can also be eaten as a lettuce wrap instead of a spring roll. If you just don't feel like going through the trouble or if you simply don't like the texture of the uncooked rice paper. These turned out amazing and taste great dipped in the avocado cilantro sauce, as well as in my vegan ranch sauce.


Filling: 3 tbsp vegetable oil 1 Avocado 1/2 can black beans 1/2 can corn 3 tbsp chopped cilantro 3 cloves minced garlic 1/2 chopped red bell pepper 1/2 chopped red onion 2 cups of spinach chopped

Wrap: 8 rice paper/spring roll wrappers 8 leaves romaine lettuce

Seasoning: 1/2 tsp chili powder 1/2 tsp cumin 1 tsp salt 1 tbsp nutritional yeast

Avocado Cilantro Sauce: 1 avocado 1/4 cup vegan mayo 1 1/2 tbsp chopped cilantro 1 tbsp unsweetened soy milk 1/4 tsp lemon zest pinch of salt pinch of pepper

Instructions Let get into it, in a pan on medium high heat your going to add your oil and allow your oil to heat up for a minute then add in your onion and bell pepper and allow that to become soft and translucent. Add your garlic, mix around and allow to cook for 2 minutes. Next add the corn, beans, and seasonings, mix in well. Then add in the spinach and cilantro and allow 2-3 minutes or until wilted down. Turn off heat and set aside.

In a small bowl, add all the avocado cilantro sauce ingredients. Mash avocado (or puree in food processor) with all the rest of the ingredients. You can adjust salt and pepper to your preference. To make your wraps you will need to re-hydrate the rice paper. In a large enough bowl to fit in your rice paper add warm water. Dip one rice paper at a time, right before making each wrap. Once you have quickly dipped the rice paper in the warm water you will place the now pliable and translucent paper onto a non porous surface like a plate.

Taking you lettuce leaf (you will only need the top half of the leaf) into the palm of your hand. slightly fill the leaf with the filling, making sure not to over stuff. Then place your filled leaf on the closest edge to you 3/4th of the way into the re-hydrated rice paper and begin to roll the rice paper over the filling filled leaf. Once you have wrapped it around half way into the rice paper you can begin to fold the corners in and over onto itself, like a gift. Then roll up the rest of the way until your spring roll in completely rolled. Continue rolling all of your spring rolls. All that is left to do is ENJOY with your sauce.
