Creamy Guava Turnovers
Guava pastries were a huge hit growing up Puerto Rican, and here and there my mom would surprise us with store bought puff pastry amazing-ness, filled to the cusp with guava paste or jam. I began making these delicious treat as soon as I discovered frozen puff pastry was a thing. Now that I am vegan I can't have the traditional puff pastry treats, so I came up with this turn over dough and when I tell you non of the flavor is lost in this vegan version. I mean they are ridiculously yummy. Not to mention the dough is super easy and the whole recipe has about 5 ingredients.
Creamy Plantain Turnovers
Turnover Dough 2 cups all purpose flour 2 tsp sugar 6 tbsp vegetable shortening 1/2 cup cold water pinch of salt
Filling Guava paste or guava jam
Other Confectioners sugar (for sprinkling)
Instructions Start of by mixing all of your dough ingredients leaving out the water for later. Using your hand or a stand mixer, work until all the ingredients are well blended together. Add in your water half at a time and continue to workout a dough.
Next roll out your dough to roughly 1/8" thickness. Roll out half of the dough at a time. It's just easier that way. Then using a cup, or a small round cookie cutter, begin to cut out your dough rounds. Once all of your dough rounds have been cut out, count how many pair of rounds you have, that way you know how much filling you need. Next cut your guava paste into approximately 1/4" thick, by 1" pieces.
Then assemble your turnovers by placing a piece of your filling on one piece of dough round. Take another piece of dough, and place it over top of the dough with the filling. Like making ravioli. Using a fork press down around the outer edges of the turnover to create a zipper like seal all the way around. Continue this process until all over your turnovers are complete.
In a pan heated to medium high heat. Filled with enough oil to cover most of the turnover. Begin adding the turnovers into the pan and fry a few at a time, until they are nicely golden brown. Remove from oil and set on a paper towel linen plate.
Sprinkle with confectioners sugar, and all that is left to do is ENJOY!
