Avocado Mango Vegan Tacos
I love myself a good taco, heck I love myself any taco. I can have a taco with just refried beans and avocado. I love a taco here, I love a taco there. I can eat it with some cabbage, I can eat it in a carriage. I can eat them on a square and I can eat them anywhere. Well I think you get the point and the point is I love tacos. So here are some carrnitas style tacos from me to you.
Avocado Mango salsa 1 small handful of cilantro 1 small red onion 1/2 red bell pepper 1 yellow mango 1 avocado
Lime Crema Sauce 1/4 cup vegan mayo 1 tsp lime juice 1 tsp apple cider vinegar
Instructions Begin by chopping all of the ingredients for your mango avocado salsa. You want you ingredients to roughly be the same in size. Next toss all the chopped ingredients into a bowl and mix. Being careful not to smash the avocado. Sprinkle with salt and pepper and put aside.
Take your ingredients for the lime crema sauce in a small bowl and mix well.
To heat up store bought corn tortillas that often come out flaky and dry. I have a solution. Dip one tortilla at a time in water and place over open flame over a burner. Make sure your flame doesn't go above the burner or it will burn. Flip using tongs. Heat until heated through and pliable. If you have a electric stove, dip in water then follow the microwave directions on the package.
Assemble your tacos by placing two tortillas as your base than adding the jackfruit. Followed by the avocado mango salsa and topping it off with the lime crema sauce. All that is left to do is ENJOY!
