Spicy Koren Cold Ramen
Spicy food has always been near and dear to my heart. Add a little spice into any dish and I just might eat it. These ramen noodle salad type of meal is delicious because you get sweet and spicy, crunch and softness all in one bite.
Ingredients 1 cup red cabbage 1 julienned carrot 1/2 cup sliced cucumber 1/2 cup sliced red bell pepper 1 tbsp sesame seeds Cooked ramen noddles (rinsed in cold water)
Sweet and spicy sauce 2 tbsp gochujang (Korean chili paste) Juice of 1 lemon 2 tbsp sugar 1 tbsp cocugaru (Korean hot pepper powder) 1 tbsp of vegetable oil (or toasted sesame seed oil for better flavor) 1 minced garlic
Instructions In a small bowl add all of the sweet and spicy sauce ingredients and whisk together well and set aside.
Into a large bowl or into a mason jar add you sauce to the bottom and layer the veggies over top in this order to prevent sogginess if storing for later. Add sesame seeds, carrots, cabbage, bell peppers, cucumbers, and finally ramen noodles.
You can store this in your fridge up to 3 days or shake up mason jar and eat it right away. All that is left to do now is ENJOY!
