Easy Vegan Pancakes
Since I Like to be fully honest when ever I post anything. I think it is only right that I admit that I have never been a fan of pancakes. Crazy isn't it? But truth is I have never really like anything bready. I don't know why I just never liked the texture unless it was mask and smothered by other flavors. Except this recipe I found myself enjoying with just a little bit of maple syrup when ever I made them for the kids. Needless to say, I think at this point is that I actually like these pancakes. They are fluffy and yummy, which is saying a lot for vegan pancakes.
Ingredients 1 c dairy free milk 1 c all purpose flour 2 tbsp baking powder pinch of salt 1 tbsp sugar 2 tbsp vegetable oil 2 tbsp chopped chocolate or mini chocolate chips 1/2 tsp cinnamon Extra 1/4 cup of chocolate for melting and drizzling
Instructions In a large bowl mix all you dry ingredients not including the chocolate. Then add your dry ingredients and mix well. Add in the 2 tbsp of chocolate and mix together lightly. Save the extra 1/4 cup of chocolate for later.
In a non stick pan at medium high height pour your batter approximately 1/4 cup at a time. Cook about 3 minutes per side. Flipping when lots of open bubbles start to form.
Once all the pancakes are done melt the 1/4 cup of chocolate in the microwave 15 seconds at a time with a splash of milk. Add extra milk once melted if needed to make a runny chocolate. Stack pancakes and drizzle chocolate over top and all that is left to do is ENJOY!
