Vegan Florentine cookies / Almond Lace

    These cookies right here, are so delicious! This are so crunchy and thin, and have all the great qualities of a good peanut brittle. The orange zest in these give it a great surprise hidden flavor. These are for sure a must try.

    Vegan Florentine cookies / Almond Lace Cookies

    Ingredients 1 3/4 c. Blanched (peeled) Finely sliced & Chopped Almonds 3 tbsp All purpose flour 2 tbsp Agave 1/4 tsp Salt 1 tbsp Orange zest 1/2 c. sugar 1/4 c. vegan butter 2 tbsp full-fat canned (cream layer) 1 tsp Pure Vanilla extract 1/2 c. Melted chocolate 1/2 tsp vegetable oil


    Pre heat oven to 275 degrees.

    In a bowl mix together, flour, salt, sugar, orange zest, and almonds.

    In a small sauce pan on medium low heat, add in the vegan butter, vanilla, coconut cream, agave, and oil. Mix together until all the ingredients are well mixed together.

    Add the wet ingredients into the dry ingredients and mix well. Then set aside and allow to set for 10-15 minutes.

    After you have allowed time for setting, scoop 1/2 tbp of the mixture at a time and form into small balls. The rounder the balls the rounder you cookies will be. Place the balls in a pan linen with parchment paper or aluminum foil and space 3 inches apart.

    Bake for 10 minutes, they will still look the same at this time. Don't be alarmed. Then rotate and bake for another 7-8 minutes. Once you remove them from the oven you can softly press the back of the spoon on any cookies that still have a little bump on top.

    Allow to cool for 10 minutes and then drizzle the chocolate over top of the cookies. If you choose to add chocolate.

    Let the chocolate set a few minutes if you have the patience and all that is left to do now is ENJOY!

    This will make a few pans of cookies and leaving this batter out while the other batches bake is perfectly fine.
