Vegan NY Style Cheesecake

So, I feel like I a constantly saying how much a certain food reminds me of something I loved to eat before going vegan and if you read my blog recipes often then you probably know by now that I just have always had a LOVE, love relationship with food. That being said, wait for it...I have always love to make cheesecake and eat it of course. In fact people use to order and buy cheesecake from me before I went vegan.
Philadelphia cream cheese + Philly girl = Cheescake. That was a very simple equation for me, back in the day. I hadn't had any cheesecake since going vegan because I though it was such a hard task, and you guys know, I'm a lazy cook and like food to be easy and simple to make but still be delicious. In other words delicious food with little effort and time to make are my fav recipes to make. I was actually wrong in thinking that it would be such a difficult task though because when deciding what to make from Gloria's recipes. I saw this beautiful cheese cake and she made it seem so easy to make and of course, it was then I knew I had found the recipe I wanted to make.
Needless to say, Gloria's cheesecake recipe is delicious and easy to make. Two of the things I love in a recipe. I added a little twist to her recipe by adding my vegan pound cake as the crust, and a sweet sour cream topping. The cheesecake turned out so good. I will be making this often.
Sour Cream Cheesecake Topping Recipe
1 c. Non dairy sour cream
3 tbsp sugar
1/8 tsp vanilla extract
In a blender, add in all ingredients and blend until smooth. Spread over cheesecake and all that is left to do is ENJOY!
