Easy Vegan Omelette
These are the best omelettes EVER! I know that sounds like an extreme statement, but I truly love these so much better then regular egg omelettes. The first time I made this I have to admit I ended up making seconds because everybody love them. Yes, even my non vegan hubby loved these. So, here I leave you with the recipe so you can enjoy these as much as we do.
Vegan Omeletten Ingredients 1/2 cup Chickpea Flour 2/3 cup water 1/2 tsp onion powder 1/2 tsp garlic powder 1/4 tsp paprika 1/4 tsp pepper 1/4 tsp salt
Filling Vegan cheese (optional) 1/2 vegan sausage (chopped & heated) I use Field Roast Mexican Chipotle Any veggies of your choice. I like to stir fry onions, bell peppers, spinach and broccoli before cooking the omelette.
Directions Mix all ingredients in a bowl, well.
If more water is needed to make a runny pancake consistancy, you can add more to the mix.
In a medium size non stick pan on medium heat, add 1/2 oil and spread. Pour in 1/2 of the omelette mix and move pan in a circular motion to spread out like you would a egg omelette. Allow to cook until the side facing up begins to look like it is firming up. Carefully flip the omelette to cook on the other side.
Once the omelette becomes cooked through you can go ahead and add in vegan sausage, and your veggies of choice. If you prefer cooked veggies like I do make sure you stir fry them or stem them ahead. Sprinkle so non dairy cheese if you like and fold over the omelette and serve. I like to add avocado and some chopped tomato on the side, or asparagus.
