Three Fully Loaded Carrot Dogs

I have tried so many different carrot dog recipes because if you have ever looked it up, you know there are a ton of them. I have tried many and a lot were good but to many had way to many ingredients or to much soy sauce and salt. That's when I decided why not just come up with a recipe that I really like and has the ingredients I like in it. Well, that's just what I did and the result were a big hit! I make these all the time. I make them and keep them in the fridge for up to 4 days and make them whenever I'm feeling lazy and want a quick meal, or for the kids who request these a lot and I don't feel guilty about feeding these to them.

Ohh and did I mention you can BBQ these? I have made these on multiple occasions for BBQ's and non vegans have eaten away at these happily. I usually double or triple the recipe for BBQ's because they are that much of a hit. No one ever eats just one.

Carrot Dogs

Ingredients 8 carrots (Marinade) 1 tbsp vegetable oil 1 1/2 tbsp soy sauce 4-5 drops liquid smoke (optional) 1/2 cup water 1 1/2 tsp salt 1 tsp dried oregano 1/2 poultry seasoning 2 tsp paprika


(Chilli Dogs) 1 can chilli beans in sauce (lightly mashed and heated) Make sure they are vegan friendly cashew cheese sauce cole slaw (already dressed) plain potato chips 1 red onion (chopped & sauteed)

(Tex Mex Taco Dogs) 1 avocado (diced) 1 raw red onion (chopped) 1/2 c. Vegan Ranch Sauce (my recipe here) 1 tomato diced 1/2 can corn Big pinch of cilantro (chopped)

(Simple Dog) Vegan Mayo (optional) 1 red onion (chopped & sauteed) Plain potato chips Ketchup Dijon Mustard

Directions To a large pot, add enough water to cover and boil the carrots. Bring water to a boil. In the meantime, peel the carrots. Once the water is boiling and the carrots are peeled, place them into the boiling water and boil until the become soft (just about for tender) but not mushy. If they become to soft they will fall apart easily.

While your carrots are boiling, mix all the ingredients for the carrot dog marinade. I usually use a square casserole dish because everything fits perfectly, but any dish that will fit all 8 carrots will do. Once the carrots have become soft (but not mushy) remove them from the boiling water and put them straight into the marinade mix. Do not pass go, do not collect $200. I like to move the carrots around to make sure that they all get marinade on them. Cover and place in the fridge. Flip the carrots around every so often to make sure they marinade evenly. Allow the carrots to bath in this marinade for 6 hours to overnight for optimal flavor. The least I have gone is 4 hours and they taste good but I much rather 6 hours or more for better flavor absorption.

To heat these up you can toss them on a pan with a tad bit of oil, you can also put a skewer in through the thick end of the carrots and place then on the grill, or even heat them in the microwave on a plate.

Next you have a very important decision to make. Which of the toppings will you choose? Or will you just eat all three? Assemble and all that is left to do now is ENJOY!
