2 Easy Vegan Chilled Soups


I love soup so much and now that the weather is warming up, chilled soup is the thing for me. I think I can eat Cream Cucumber Soup Morning noon and night. I love that soup that much. I also love the Sunshine Corn soup too, but of course you have to have a favorite. Anyways, these are fresh and delicious and would go perfect on their own or with a nice picnic meal. You can make these and store them in a mason jar and in your cooler and been of to a picnic or BBQ!

Ingredients

Creamy Cucumber Soup 1/2 tsp onion powder 1/2 tsp garlic powder 4 tbsp dill, fresh 2 green onion 2 c. cucumbers 2 c. yogurt plain 2 tsp dijon mustard 2 tbsp extra virgin olive oil Salt & Pepper, to taste

Sunshine Corn Soup 1/2 tsp onion powder 1/2 tsp garlic powder 1/2 c. diced tomato 1/4 white onion 2 c. sweet corn 2 c. yogurt plain 2 tsp apple cider vinegar 1/2 yellow bell pepper 2 tbsp extra virgin olive oil Salt & Pepper, to taste

Instructions Blend all ingredients together for each individual soup. Serve chilled.

Garnish Creamy Cucumber Soup can be garnished with chopped cucumber, a drizzle of extra virgin olive oil and a drizzle of watered down non dairy sour cream, with a sprig of fresh dill.

Sunshine Corn Soup can be garnished with some extra kernels of corn, a drizzle of olive oil and a cilantro leaf.

All that is left to do is ENJOY!
