Spicy Vegan Mac and Cheese Balls

If you like macaroni and cheese, these will be heavenly. You can give this the any non vegan and they would never know its vegan. Drizzle some sriracha sauce over it and enjoy the spicy goodness with a beautiful crunch.


Mac and Cheese 2 cup uncooked macaroni pasta (Cooked) 1 - 8oz tub vegan cream cheese (I used tofutti) 1/4 cup cilanto (finely chopped) 1 tbsp nutrional yeast (Optional, flavorful without it) 1 tbsp dijon mustard 1 tbsp cornstarch 1/4 bread crumbs, plain 1/2 tsp apple cider vinegar 1/4 cup almond milk, unsweetend 4 jalapenos, seeded and finely chopped (optional and adjustable) 1 tsp onion powder 1/2 paprika 1-1/2 cup non dairy cheddar cheese Salt and pepper to taste

Egg Replacer Coating 1 cup all purpose flour 1 cup water

Extras Vegetable oil, for frying if not baking Extra bread crumbs, for coating Sriracha Sauce, for over top (optional)

Directions Preheat oven 400F. In a large mixing bowl add in all mac and cheese ingregients and mix until everything is completely combined.

Add mixture into a grease 8-9 inch pan ( I used a pie dish) and place in oven for 20 minutes, uncovered.

Remove from oven, mix around with a spoon and allow to cool down for a few minutes before handling.

Mix the flour and water together to create the egg replacer.

Form the mac and cheese into golf ball size balls, in your hands and dip into the egg replacer mix. Roll mac and cheese balls into the bread crumbs. Continue until all done.

Deep fry these three at a time in a deep fryer or a pot full of oil. To test oil carefully drop in one macaroni and when it float the oil is hot enough.

Deep fry for about 1-2 minutes or until the become golden brown. Continue with all the balls until all are cooked.

You can eat these plain, or with some sriracha sauce to take it over the top. All that is left to do now is ENJOY!

Baking Tip: Place these onto a parchment paper linen baking sheet. Spray lightly with oil (this will help the coating become golden) and place in a 425F preheated oven for 10 minutes, flip and bake another 10 mintues, or until golden.
