Easy Vegan Funnel Cake
That warm sweet smell you get when your walking around a carnival or walking down the boardwalk. That is what comes to mind when I think of funnel cake. Only thing is being vegan The smell now can be a little saddening because I can no longer indulge in that. Until NOW! I made this vegan version easy and quick so that I too can indulge whenever a craving pops up.
Ingredients 1 - 1/2 cup almond milk, unsweetened 1 - 1/3 cup all purpose flour 1 flax seed egg 1/4 tsp salt 3 tbsp sugar 2 tsp baking powder Oil for frying Confectioner's sugar
Directions In a medium size mixing bowl mix all dry ingredients together.
Add in the flax egg and milk into the mixture and whisk until just mixed together DO NOT overmix.
Heat at medium high, enough oil in a small pan to fill half way. Pour batter 1/2 cup to 2/3 cup at a time in a circular then random motion in the middle to create that signiture funnel cake look.
Cook on each side until the funnel cake becomes golden.
Remove from oil and place onto paper towel liner plate.
Sprinkle confectioners sugar over top and all that is left to do now is ENJOY!
