Easy Hash Brown Casserole


This is the kind of dish that can be made for so many different occasions. Breakfast, brunch, lunch, dinner. Also potlucks, BBQ's, and this is going to be on my table on Thanksgiving this year. Super easy to make and delicious.

Ingredients 6 cup hash browns 1/2 cup corn flakes, plain 1/2 cup non vegan butter, melted (separated, 1/4 cup and 1/4 cup) 1 tsp salt 1/2 tsp black pepper 1/2 tbsp garlic powder 1/2 tbsp onion 1/2 cup bell pepper, chopped 1/2 cup onion, chopped 8 oz tub non dairy cream cheese, softened 1 cup non dairy cheddar cheese 2 tbsp nutritional yeast

Instructions Preheat oven to 350F.

In a large mixing bowl, mix together all ingredients except for the corn flakes and 1/4 cup of butter. Pour mixture into a 8 x 8 square casserole dish.

In a medium mixing bowl mix together the corn flakes and the 1/4 cup of butter.

Add the corn flakes mixture over top of the casserole mixture. You can add a sprinkle of the following over the corn flakes for added flavor. Salt, pepper, and nutritional yeast.

Place the dish into the preheated oven for 45 minutes and all that is left to do now is ENJOY!

RECIPE TIP: Check half way through cooking, if the topping is browning to fast, lay a piece of parchment paper over top to keep the topping from browning to much.
