Vegan Coconut Candy


I remember being a little kid and going to this store where my mom would get coconut soda and they sold this delicious coconut shreds candy that I could just never get enough of. I grew up still loving the stuff and naturally for me if I loved it I had to learn how to make it. I have been making this recipe for so long and have done some slight tweaking over the years to get it to that perfect childhood memory candy I remember.

Ingredients 2 cup coconut flakes, sweetened 1 1/2 cup light brown sugar 1 cup water 1/4 tsp vanilla extract Pinch ginger powder

Instructions Into a medium pot, add all ingredients. Keep the heat at a medium to medium high heat. Mix ingredients well and bring to a boil but NOT a roaring boil.

Heat the mixture and stir occasionally until there is no liquid left in the pot. This should take somewhere around 10 minutes.

Careful not to burn the mixture. Once the liquid evaporates, it will burn easily.

Remove from heat. Take spoonfuls of the mixture and place onto a parchment paper. Flatten with the back of a spoon. If the mixture sticks to the spoon too much, dampen the back of the spoon.

This mix will harden fairly fast, so work quickly.

Allow the candy to cool down. Once cooled the candy will harden but not as hard as a hard candy. More like a chewy cookie. All that is left to do now is ENJOY!
