Cheesy Broccoli Rice Casserole
Ingredients 6 cup broccoli, florets 3/4 cup onion, chopped 2 cup white rice, cooked ( I used instant) 3 tbsp flour 2 cups cheddar cheese, non diary 4 tbsp cream cheese 2 cup milk 1/2 tsp paprika 1/2 tsp garlic powder 1/4 tsp black pepper 2 tbsp vegetable oil Salt to taste
Instructions Preheat oven to 350F.
In a medium pan, add in oil and onion. Cook on medium high heat until it becomes translucent then add in the flour. Sprinkle in a pinch of salt and pepper.
Cook until the flour becomes blonde in color, then slowly add in the milk while whisking. Until the mixture thickens.
Remove from heat and add in spices and 1/2 cups of cheese (save 1/2 cup for topping). Mix well and stir until it the cheese has melted.
Add broccoli to boiling water until it become just aldente. You want the broccoli to still have a bite because you will cook it in the oven. Boil for 3-4 minutes.
In a large mixing bowl, mix together cheese sauce, broccoli, and rice. Add mixture into a 8 x 8 greased casserole dish. Sprinkle the remainder of cheese oven top.
Bake for 35 minutes or until the cheese becomes lightly browned and crisp around the edges. All that is left to do now is ENJOY!
