Vegan Nacho Cheese


    The hardest thing for me to let go when I became vegan was cheese. Since becoming vegan I am constantly trying to come up with different ways to recreate the cheese foods that I was so attached to in the past. My biggest attachment was nacho cheese dipping sauce because I have always had a weakness for chips and dip.

    I made this nacho cheese on a whim one day after my son asked my mom for REAL cheese dip in the super market (he's vegetarian) and I said "No, I can make that vegan" lol but I had no idea how I was going to make it actually taste like nacho cheese, rather then just cheese sauce. Regardless, I got into the kitchen and this delightful vegan cheese was born.

    Ingredients 1 1/2 cup peper jack non dairy cheese (I used daiya) 3/4 cup water 1/2 tsp turmeric 1/4 tsp salt 1/4 chili powder 1/4 cayenne pepper

    Instructions In a small pot, add in all ingredients and bring to a boil on high heat.

    Once it comes to a boil lower heat to medium high and stir until everything has melted together.

    When everything is melted you can add in extra salt to taste or extra turmeric for color. All that is left to do now is ENJOY!
