Vegan Mac and Cheese | Vegan Thanksgiving


I got the inspiration to come up with this recipe because my 3 year old daughter is obsessed with mac and cheese. As a lot of 3 year olds are, so the constant request to mac and cheese is what made this recipe come about. I make this is a double batch at times and let her and my 8 year old eat for a few days or pack it for school lunch. This mac and cheese is delicious and can be eaten without baking. In fact I noticed the kids prefer this recipe before its baked because it is more creamy and classic that way. I on the other hand like the top layer from baking. This is why I have instructions on here for both.

Ingredients 3 cup elbow pasta, uncooked 1/2 cup unsweetened almond milk

Cheese Mix 1 cup unsweetened almond milk 1/2 cup cream cheese, non dairy 1 1/2 cup cheddar cheese, non dairy 1 1/2 tbsp nutritional yeast 1/2 tsp chili powder 1/2 tsp cayenne pepper, powder 1 tsp salt

Topping 1/4 cup bread crumbs, plain 2 tbsp nutritional yeast 1 tsp salt (1/2 if you want lower sodium) 1/2 tsp basil 1/2 tsp paprika 1/2 tsp garlic powder 1/2 onion powder

Instructions Preheat oven to 400F.

In a medium pot, bring salted water to a boil and add in the pasta. Boil pasta until aldente, which just means it has some bite left.

Once done drain and set aside.

With a medium sauce pan on medium high heat, add in the almond milk and the cheese. Do not bring to a boil. Once you see the cheese starting to melt into the milk add in the spices, nutritional cheese, and the cream cheese.

Mix well until everything is well melted together and creamy. (At this moment you can taste test taste the sauce and add any personal touches you may like)

Keep the cheese sauce at the lowest heat possible if not using right away. If cheese sauce thickens reheat until it becomes thin again.

In a large mixing bowl, add the cooked pasta and the cheese sauce and mix well until everything is well incorporated. (You can eat it at this point. Before baking, it will be the creamiest it gets.)

Add the milk into the make and cheese (if baking) and mix.

Place mac and cheese into a greased 8 x 8 casserole dish.

In a small mixing bowl mix together topping ingredients.

Add half the topping over the mac and cheese.

Place the mac and cheese into the oven or broiler until the topping has browned. All that is left to do now is enjoy!
