Vegan Drop Sugar Cookie
I feel like I say this far too much..hehe but it's true. I don't have much of a sweet tooth. That being said sugar cookies seem to be exempt, because sugar cookies have always held such a special place in my heart. Since I was a kind I had been working on perfecting sugar cookies, so I think it goes without saying that I would have to come up with a vegan sugar cookie, when I went vegan.
This recipe Is really easy and quick to whip up.
Ingredients 1 & 1/8 cup all purpose flour 1/2 cup cane sugar 1/4 cup brown sugar 2 tsp vanilla extract 1/2 tsp baking powder 1/2 tsp baking soda 1/2 cup non-dairy butter, softened 3 tbsp agua fava (Canned chickpea liquid)
Instuctions Preheat oven 350F.
In a medium mixing bowl or stand mixer cream together butter and both kinds of sugar. Add in the vanilla extract, and agua fava. Mix until incorporated.
In a separate small mixing bowl, mix together flour, baking soda, and baking powder.
Add the dry ingredients into the wet ingredients and mix until just combined. Do NOT over mix. Chill batter in freezer for 5 minutes.
Remove from freezer and add spoonfuls onto a greased cookie tray 2 1/2 inches apart. YOu may need two cookie trays.
Add sprinkles or sugar over top and bake for 10-12 minutes or until golden brown around the edges. Remove from oven and allow to cool completely and enjoy a delicious bite!
