Black Bean Sweet Potato Burger

This burger is a delicious and easy recipe to whip up quickly. Not only is it great between two buns and toppings, but it is also delicious as a side or over a salad.

Black Bean Sweet Potato Burger Servings 6 Patties

Ingredients (For burger)

1 cup black beans, cooked 1/3 cup quinoa, cooked 1/2 old fashion oats 1/2 red onion, chopped 1/2 cup cilantro, fresh 2 medium sweet potatoes 1 tsp chipotle powder (optional) 1 tsp garlic powder 1/2 onion powder 1/2 tsp ground cumin 1/2 tsp oregano 1 tbsp lime juice Salt & Pepper to taste

Cilantro Lime Sauce 3 tbsp vegan mayo 1/4 cup soy yogurt, thick or sub with mayo 2 tbsp lime juice 1/2 cup cilantro, fresh 1/2 tsp ground cumin Salt & Pepper to taste

Instructions Preheat oven to 400F.

Add all burger ingredients into a food processor and pulse, until there are no big chuncks left.

Shape burger patties and place onto a greased baking tray.

Bake for 9 minutes per side, or until golden brown.

While the patties bake prepare the cilantro lime sauce.

Toss all sauce ingredients into a food processor or blender and blend until smooth. Assemble burgers to your liking and ENJOY!

Topping Options that work well with this burger are, avocado, lettuce, tomato, onion, mayo, ketchup, and cilantro lime sauce.
