Vegan Chicken-less Stew

This vegan chicken-less stuff is inspired by the Puerto Rican Dish know as Pollo Guisado, which means... chicken stew! Surprise, surprise lol. The flavors in this recipe are bold and delicious. We like to eat this on it's own or with some white rice.

Ingredients 3 tbsp vegetable oil 1 yellow onion, chopped 1 green bell pepper, chopped 4 medium potatoes, peeled and chopped 4 cup carrots, chopped 1 1/2 tsp salt 6 cup vegetable stock 1 packet Sazon 2 tsp adobo powder 1/2 cup green lentils 1/2 cup qunioa 1 tsp oregano 1 cup cilantro, chopped & loosely packed 1 tbsp red wine vinegar 1/4 cup tomato sauce

Instructions In a large pot, add oil , onion, and pepper and saute on medium high heat for 3 minutes. Add a pinch of salt and pepper while sauteing.

Add in all renaming ingredients, and cook on low heat, until everything is in the pot is nice and tender. This should take somewhere around 30 minutes.

You can cover the pot with a lid, leaving it slighty ajar to avoid over boiling.

Once everything is cooked, pour a bowl and garnish with cilantro if you like and ENJOY!
