Chocolate Chip Skillet Cookie

Why make a bunch of little chocolate chip cookies, when you can make one huge one? This skillet cookie is so easy to make and can even be used in place of a birthday cake. I made this for mu non vegan husband's birthday, because he loves it and everyone was happy.

Ingredients 1/2 cup brown sugar 1/4 cup sugar, granulated 1 1/2 cup all purpose flour 1/2 cup butter 1 tsp vanilla extract 1/2 tsp baking powder 1/4 cup non-dairy chocolate chips 1/4 tsp salt

Instructions Preheat oven 350F.

In a medium mixing bowl, add butter and both sugars.

Cream together by hand or using a mixer. Mix until smooth.

Add in the vanilla extract and mix again until incorporated.

Add in the chocolate chips and mix again until incorporated.

Add in the remaining ingredients and mix until there is no longer any flour showing through.

DO NOT oven mix the cookie dough or you will end up with a though cookie.

Add the cookie dough to a well seasoned, 9 or 10 inch cast iron skillet or place dough into a greased, 9 or 10 inch cake pan.

Bake for 23-28 minutes or until the cookie turns golden brown with slightly darker edges and the middle has set.

Allow to cool for at least 20 minutes before digging in. ENJOY!
