    Vegan Fish and Chips Sandwich

    This sandwich is my own little twist on traditional fish and chips. Here in the US chips are potato crisps so I was like I must make a sandwich with "actual" chips. Plus the crunch in the chips add great texture to this oh so yummy sandwich. For a healthier alternative, swap out the chips in the breading for more breading, swap mayo in the sauce for plain yogurt and if you want you can turn this into a lettuce wrap and get rid of the buns.

    Ingredients (1) 1/2" thick slice of tofu, firm-extra firm (lengthwise) 2 burger buns, or bread of choice 1 nori sheet cut into 2 two rectangles to the size of the tofu

    Breading 1/2 cup panko bread crumbs 1/2 cup plain potato chips pepper to taste Batter 1/4 cup all purpose flour 3 tbsp water pinch of salt

    Garlic Butter 1 tsp non dairy butter, melted 1/4 tsp garlic powder

    Sriracha Mayo 1 1/2 tbsp mayo 1-2 tsp sriracha sauce (to taste) 1/4 tsp garlic powder 1/4 tsp lemon juice, fresh 1/4 tsp parsley

    Toppings Red cabbage, cut into strips pickle chips Potato chips tomato

    Instructions Pre heat oven, 400F.

    In a small mixing bowl, combine breading ingredients and set aside.

    In a small shallow bowl, combine the batter ingredients, until smooth.

    Mix sriracha mayo sauce ingredients together and place aside.

    In yet another small bowl combine melted butter and garlic.

    Salt and pepper both sides of your tofu slice and brush the tofu with the garlic butter, one side at a time. Place one of the cut nori pieces over the tofu (making sure the nori only covers the tofu but does not come over the edge) and press lightly to "adhere" the nori to the tofu. Repeat to other side.

    Dip the nori covered tofu, into the flour batter mix to coat. Being careful not to remove the nori sheet.

    Carefully place the tofu into the breading mix and coat well. Press firmly to make sure the breading sticks.

    Lightly spray tofu fillet with oil on both sides and place onto a parchment paper covered baking tray and bake for 30 minutes, making sure to flip the tofu half way through.

    Assemble the sandwich by simply spreading some sauce on both buns, add cabbage, tofu fillet, potato chips, tomato, and pickles. Serve up and ENJOY!
