Dutch Chocolate Coffee Cookies
Dutch Chocolate Coffee Cookies I call these dutch chocolate coffee cookies even though they are not made with dutch chocolate because the remind me of the mildly flavored dutch chocolate ice cream I use to eat when I was a little kid. The chocolate in these is mild and the coffee is the perfect little touch of something special.
Ingredients 1/2 cup non dairy butter 1 cup brown sugar, packed 1 tsp vanilla extract 2 1/2 cup oat flour (blended oats until smooth to get oat flour) 1 tbsp cocoa powder 1 tsp baking powder 1 tsp instant coffee 2 tbsp almond milk, unsweetened 1/4 cup semi sweet chocolate chips, optional
Instructions Pre heat oven 350F.
In a large mixing bowl, mix together butter and sugar, and cream (mix) together until smooth.
Add in vanilla and milk, and mix very very well.
Add in all of the dry ingredients, and mix until combined.
You can fold in the chocolate chips at this point or add a few over the top.
Onto two baking sheets, drop the cookie dough by the table spoonful, 2 inches apart.
Bake for 12-15 minutes, allow to cool completely and ENJOY!
