Easy Vegan Chicken Tenders


This recipe for vegan tenders/nuggets is my fav from all the mock meat recipes I have done. This recipe can be baked. I have added baking instructions at the bottom of the recipe. This is also very easy to make and very affordable. You can make about 60 of these tenders for the price that you buy one packet of frozen store bought tenders. If you make nuggets you can make 120 nuggets for the price of one bag of the leading brands of vegan frozen nuggets.

The cost for me to make this recipe for 10 tenders is less then $1.

Easy Vegan Chicken Tenders

Ingredients 1 cup TVP (textured vegetable protein) 1 cup vegetable stock 1/4 cup flour 1/4 tsp onion powder 1/4 garlic powder 1/8 tsp poultry seasoning 1/8 ground cumin Salt and pepper to taste 2 cup bread crumbs

Batter 1/4 cup all purpose flour 1/3 cup water Salt and pepper to taste Vegetable oil for frying, optional

Instructions In a medium sauce pan, bring vegetable stock and spices to a boil.

Add in TVP, mix well to saturate TVP with stock. Turn off heat and cover for 5 minutes, to rehydrate.

Mix in a 1/4 cup flour with TVP mix, and allow mixture to cool enough to handle.

In a medium mixing bowl, mix batter ingredients together, and separately add breadcrumbs into a wide bowl, set aside for breading station.

Take heaping spoonfuls of TVP mixture and form into tender shapes, or nugget shapes.

Dip formed tenders into the flour batter mixture, to coat and next cover in breadcrumbs.

Continue this process until all 10 tenders or 20 nuggets (if doing half the size) are formed and breaded.

If frying add enough vegetable oil into a frying pan to cover the tenders half way. Fry on high heat until each side is golden brown. This should take 2-3 minutes per side.

Remove from oil and place onto a paper towel lined sheet, to collect any excess oil.

If baking, preheat oven to 400F. and add the breaded tenders onto a parchment paper lined baking tray. Lightly spray both sides of the tenders with oil spray (for a little added crispness) and bake for 30 minutes, flipping half way through.

Serve with your favorite sauce and ENJOY!
