Fresh Heart of Palm Ceviche


This is the kind of recipe that you get addicted to. I love to have this anytime but especially on warm days. We take it on picnics to the park, the beach, and when we have BBQ's too. It goes great by itself and even better on a corn tostada.

Ingredients 1 Can Corn 1 can palm hearts 1 zucchini 2 tomatoes 2 medium/small bell peppers 1 medium red onion 1 mango 1 avocado Juice of 1 lemon or lime 1/2 orange 1 handful cilantro

Instructions

Chop zucchini, tomatoes, bell peppers, red onion, mango, avocado, palm hearts, and cilantro into small pieces.

Mix all veggies including corn.

Squeeze citrus juices in. Add more to taste if you like.

Salt and pepper to taste.

EAT UP! Can be eaten alone or with tortilla chips, in a lettuce wrap, or tortilla. ENJOY!
