BBQ Dill Cucumber Wrap

    Ingredients Batter Mix 1/2 tsp garlic powder 1/2 onion powder 1/4 tsp smoked paprika 1/4 tsp cumin 1/4 tsp parsley 1/4 tsp salt 1/4 ground black pepper 1 1/2 cup all purpose flour 2 cups bread crumbs 1 1/2 cup water

    Other 1/2 large head cauliflower, sliced to 1 inch thickness 1 cup BBQ sauce for coating 4 Burritos tortilla wraps

    Dill Cucumber Slaw 1/2 cucumber, large sliced thin 1/2 tbsp dill weed 1/4 red onion 1 tbsp vinegar 1/4 cup non dairy mayo 1/4 tsp pepper 1/2 tsp salt 1-2 tbsp sugar (to taste)

    Instuctions Preheat oven to 450F.

    In a large mixing bowl, mix all ingredients for the batter together EXCEPT for the water. Whisk together all the dry ingredients and add whisk in the water until smooth.

    Place bread crumbs into a large shallow bowl.

    Dip sliced cauliflower into the batter mix, tap off excess mixture and coat with bread crumbs.

    Place the breaded cauliflower onto a parchment paper lined baking tray and bake for 20 minutes.

    While the cauliflower bakes, mix all the ingredients for the cucumber slaw. Place aside for later.

    Brush BBQ sauce on the cauliflower on both sides to coat. Bake for an additional 20 minutes.

    Assemble by placing one tortilla wrap flat on a cutting board, place a BBQ cauliflower steak on the middle, and stack a heaping spoonful of the Cucumber slaw.

    Close wrap by folding edges onto the center and ENJOY!
