Sweet Jalapeno Cornbread
Ingredients 1 cup cornmeal, fine 1 cup all purpose flour 3/4 cup non dairy milk 1/2 cup white sugar 1 tbsp baking powder 1/3 cup non dairy butter, melted 1/2 tsp salt 1 cup corn kernels, fresh, frozen, or canned (optional) 1 jalapeno pepper, chopped (optional)
Instuctions Pre heat oven to 400F.
In a large mixing bowl combine all ingredients and mix until just combined. Do NOT over mix.
Pour mixture into a grease skillet or 8x8 baking dish and bake for 20-25 minutes or until a toothpick comes out the center clean.
Once baked, allow to cool for 15-20 minutes. Serve next to your favorite meal or alone and ENJOY!
