Cheddar Potato Cakes w/Chimichuri Sauce


    Ingredients

    Potato Cakes 1 cup mash potatoes, Do NOT use instant here 1 tsp chopped parsley, fresh 1 tsp chopped basil, fresh 1 tsp onion powder 1 tsp garlic powder 1/2 small red bell pepper 1 tbsp all purpose flour 1 1/2 tbsp nutritional yeast 2 tbsp non dairy cheddar 1 green onion, chopped Salt & Pepper to taste

    Chimichuri Style Sauce 1/2 cup cilantro Large pinch fresh parsley 4 green onions, chopped 1/2 tsp dried oregano Pinch crushed red pepper 1/4 cup olive oil

    Other 2 tbsp vegetable oil, for cooking

    Instructions In a small mixing bowl mix together all potato cake ingredients, until well combined. Place aside.

    Into a blender add in all the sauce ingredients and pulse until smooth but some texture is left.

    Form potato patties/cakes and fry in a pan with oil, on medium high. For 2-3 minutes per side or until golden brown and crispy.

    Serve with sauce and a dollop of cream cheese or sour cream and ENJOY!
