Loaded Buffalo Casserole
Ingredients 3 cups potatoes, peeled and cubed 1 small medium cauliflower 1 carrot, peeled and cubed small 1 stalk celery 1 tbsp garlic powder 1 tbsp onion powder 1 tsp smoked paprika 4 slices vegan bacon, chopped (I used litelife brand) 1 cup buffalo wing sauce, or 1/2 for less spice 1/2 cup panko bread crumbs 1/2 14oz soft or silken tofu, blended smooth
Instructions Preheat oven 350F.
Boil cauliflower and potatoes for 10 minutes or until slightly tender.
Drain and set into a large mixing bowl.
Add in the remaining ingredients, except bread crumbs and leaving out 1/2 of the chopped vegan bacon to sprinkle over top later, mix well.
Add mixture into a 8x8 casserole dish, level out and sprinkle with bread crumbs and vegan bacon over top.
Bake covered with foil for 30 minutes.
Uncover and bake for additional 20 minutes.
Allow 10 minutes to set before cutting and ENJOY!
