Easy Mushroom Ragu


    Ingredients 3 garlic cloves, minced or grated 1 tbsp veg oil 1/2 onion, finely chopped 2 cups mixed mushrooms 2 tbsp tomato paste 1 cup veg stock 1 tsp onion powder 1 tsp garlic powder Salt and pepper to taste 1/2 tsp sugar 1 bay leaf (optional) 1/2 tsp dry rosemary (optional)

    Instructions

    In a skillet, over medium high heat, add oil and onions. Cook until translucent.

    Add in the garlic and cook for 1 minute or until fragrant.

    Add in mushrooms and cook down until mushrooms have become golden in color. This should take about 5 minutes.

    Add in the remainder of the ingredients. Mix to combine and cook for 4-5 minutes.

    Serve over warm polenta, rice or anything you like and ENJOY!
