Twice Baked Sweet Potatoes


    Ingredients 2 sweet potatoes 1/2 8oz package vegan cream cheese 1/2 tbsp fresh thyme leave, chopped 1/2 tsp sage, powder 1/2 tbsp veg oil 2 green onions, chopped 1/2 cup mushroom, chopped 1/2 red bell pepper, chopped 1 tbsp veg oil

    Pinch of salt

    Instructions Preheat oven to 350F.

    Grease baking pan, cut potatoes in half length wise. Place cut side down onto pan. Bake 40-45 minutes or until tender.

    Allow to cool for 10 minutes.

    Cook veggies in a skillet on medium high heat, with a tbsp of oil for 5 minutes or until tender. Scoop out potato innerds, leaving 1/4" wall.

    Place scooped out potato into a bowl and mash until small pieces remain. Fold in remaning ingredients, including veggie mixture.

    Bake an additional 15 minutes, remove from oven and ENJOY!
