Vegan Mushroom Alfredo Pasta
This is a very easy a quick recipe. Perfect for a busy week day and there nothing you will miss flavor wise. A lot of quick recipes lack flavor, but this recipe is everything and a bag of chips! It's creamy, savory, and it's pasta which makes it very satisfying!
Are you a break your spaghetti in half type of person? I use to do that myself but I don't anymore. I just let the spaghetti sort of relax into the pot lol. Like relaxing into a nice hot tub. I'm not a spaghetti breaker judger tho. To each he's own!

2 tbsp non dairy butter 5 oz white button mushrooms, chopped into quarters 3 garlic cloves, minced 1/2 cup non dairy cream cheese 2 tbsp nutritional yeast 1 tsp dried basil 1 small handful, fresh parsley 1/4 cup vegetable stock Salt & Pepper to taste
Instructions In a medium saucepan, add butter on medium high heat. Add in the mushrooms and cook for 4 minutes. Flip when golden and cook a second side for an additional 4 minutes.
Move mushrooms to the side and add in the garlic and cook for 1 minute. Mix together. Mix and add in the cream cheese along with the rest of the ingredients. Stir well to combine and add salt and pepper to taste. Serve with your favorite pasta and ENJOY!
