Vegan Shepherd's Pie
Ingredients 3 cups mashed potatoes 2 garlic cloves, minced 2 1/2 cups vegan ground meat 1/2 cup carrot, shredded 1/2 cup onion, chopped 1/2 celery stalk, chopped 1 tsp veggie bouillon 1 tsp garlic powder 1 tsp onion powder 1 tbsp nutritional yeast 1/2 tsp cumin 1/4 cup vegan cheese, shreds (optional) Salt & pepper to taste 2 tbsp olive oil

Instructions Preheat oven to 400 degrees F.
Into a large skillet on medium high heat, add olive oil, onion, carrot, and celery. Allow to cook down and become tender. This should take about 4-5 minutes.
Make a well in the center and add in the garlic cloves. Cook for 1 minute or until the garlic becomes fragrant.
Add in the vegan grounds and mix well to combine. Add in spices, nutritional yeast and salt and pepper to taste. Cook until heated completely through.
Add vegan ground mix into a small (6x6) casserole dish and level out. Add mash potatoes on top of the grounds and spread evenly over top.
Sprinkle cheese over the mashed potatoes and place in the oven for 10 minutes or until the top has become golden. Serve and ENJOY!
