Coconut Black Bean Stew
Ingredients 2 tsp coriander 2 tsp cumin 1/4 tsp cayenne pepper 2 tbsp sugar 2 cans black beans, rinsed and drained 1 tbsp fresh ginger, grated 2 garlic cloves, minced 1 cup sweet potatoes, cubed 2 cups vegetable broth 1/2 cup cilantro, chopped 1 cup coconut milk, full fat 1/2 red onion, chopped 1 tbsp coconut oil

Instructions Into a large pot on medium high heat add in coconut oil and heat through. Toss in the onion and bell pepper and saute for 2-3 minutes or until onions become translucent.
Make a well in the center and add in the minced garlic. Allow to cook for 1 minute or until fragrant.
Add in everything EXCEPT for the cilantro. Bring to a boil, cover, reduce to a simmer and cook for 15 minutes.
Add in cilantro and mix. Cook for an additional 3 minutes and serve over rice. Garnish with cilantro if you wish and ENJOY!
