Vegan Minced Meat
Ingredients 1/2 red onion, diced 10 oz button mushrooms, finely minced 14 oz block extra firm tofu 2 tsp soy sauce 2 tsp onion powder 2 tsp garlic powder 1 tsp cumin 1 tsp sazon seasoning 1/2 tsp ground black pepper 3 garlic cloves, minced 1 tbsp olive oil 1 tbsp olive oil

Instructions Add 1 tbsp of oil into a non stick pan an heat to a high heat.
Toss in the onion and cook until transparent. Add in the garlic and cook for an additional minute.
Add in the mushrooms into the pan and saute for 10 minutes or until all liquid has evaporated and mushrooms have reduced and turned brown in color. Remove from pan and set aside.
Add 1 tbsp olive oil into the same pan on high heat and crumble in the tofu. Cook for 10 minutes pressing with a spatula to help evaporate the liquid faster. Cook until no more liquid is left.
Add in the mushrooms and spices and mix well until combined. Serve and ENJOY!
