Chipotle Potato Salad


    Ingredients 3 lbs Yukon gold potatoes, or small white potatoes (peel and boiled) 3/4 cup vegan mayo 2 tbsp chipotle sauce (from chipotle peppers in adobo sauce can) 1/2 cup fresh cilantro 1 tsp garlic powder 1 tsp onion powder 1/2 tsp ground black pepper 1 small red bell pepper, chopped 1/2 tsp salt or to taste 1/2 red onion, chopped 1/2 juice from lime

    Instructions Place cooked potatoes in a large bowl and mash a bit, while still leaving a bit of texture.

    Add in all remaining ingredients, mix together very well and enjoy!
