Creamy Tomato Soup


    Ingredients 2 - 28oz cans crushed tomatoes 1 1/2 cup vegetable broth 4 garlic cloves, minced 1 red onion, chopped 1/2 tsp salt 1 tsp onion powder 1 tsp garlic powder 1 tsp dried basil 1/2 tsp ground black pepper 1 tsp sugar 1/2 cup vegan cream cheese 1-2 tbsp vegetable oil for sauteing

    Instructions Add oil into a large sauce pan and heat to medium high heat. Add in the onion and saute for 3-4 minutes or until translucent and slightly golden.

    Make a well in the center and add in the minced garlic and cook for 1-2 minutes or until fragrant. Pour in the crushed tomatoes, spices, and sugar. Mix well and simmer for 20 minutes.

    Add in the vegan cream cheese and blend all together using a standard blender or a hand blender until smooth. If you use a standard blender leave the lid slightly open to avoid the blender from over flowing from the heat.

    Serve as you wish and enjoy!
