Creamy "Sausage" Pasta
3 cups large pasta shells, cooked (or other pasta of choice)
1/2 onion, chopped
1/2 cup vegan sausage, crumbled
3 tbsp tomato paste
1/2 8oz tub vegan cream cheese
2 tsp onion powder
2 tsp garlic powder
1/2 tsp paprika
1 tbsp dried parsley
1/2 tsp sea salt, or to taste
1/2 tsp ground black pepper, or to taste
1/2 red bell pepper, chopped
1 tbsp all purpose flour + 2 tbsp water, combined and mixed well
1 tsp sugar
1/2 cup tomato, chopped
1 1/2 cup vegetable broth
1 tbsp vegetable oil

In a large sauce pan, add oil and heat to a medium high heat.
Add in the onion and bell pepper and saute until veggies are soft and translucent.
Add the vegan sausage and cook for 2 minutes.
Add the tomato paste and mix into the veggie and sausage mixture just until combined well.
Add the cream cheese into the pan stir until melted. You can lower the heat if there is any sticking.
Pour in the veggie broth along with spices and seasoning (including sugar) and mix well.
Stir in the flour and water slurry mixture, and cook for an additional 2 minutes or until thickened.
Add the chopped tomatoes into the mix and the cooked pasta. Stir well and ENJOY!
Garnish with parsley if desired.
