Easy Authentic Hummus
This hummus is very authentic and delicious. Now I know what you are thinking! "What's up with all those toppings Rose? That's not authentic to hummus." Okay, you got me the topping are totally optional and for aesthetics here. That being said this hummus is incredibly creamy and delicious!
It's the type of dish where you say to yourself, "I'm gonna have some of this hummus with a small handful of pita slices (I mean veggies lol) and next thing you know your going in for another and another! Yea, it's that good.
The toppings are totally optional and so is the extra splash of olive oil. If you're going for a healthier snack cut back on the extra drizzle at the end but, who are we kidding here. If you want that authentic tasting hummus you NEED the extra drizzle!
I roast a handful of chickpeas in the air fryer for 15 minutes on 400 degrees Fahrenheit or until they become crispy. Then I sprinkle them over the finished hummus for a little added crunch. You can also add tomatoes, chopped red onions, parsley, and some sprinkled Zatar seasoning.
3 cups cooked chickpeas
2 garlic cloves, minced
1/3 cup tahini paste
1/2 tsp sea salt
Juice of 1 lemon
Water (for blending smooth)
Extra virgin olive oil
Add chickpeas and minced garlic to the bowl of a food processor. Puree until smooth. Add water as needed.
While the food processor is running, tahini, salt, and lemon juice. Blend for about 4 minutes or so. Check, and if the consistency is too thick still, run the food processor and slowly add a little more water if needed. Blend until you reach desired smooth consistency.
Spread in a serving bowl and add a generous drizzle of EVOO add toppings if you wish and ENJOY!
