Easy Vegan Donuts | Spiced Maple



Ingredients

2 cups all-purpose flour

1 Cup non dairy milk

1 tsp vanilla extract

1/2 tbsp apple cider vinegar

1/2 cup granulated sugar

1/3 cup unsweetened apple sauce

1/3 cup coconut oil

1/4 tsp nutmeg

2 1/2 tsp baking powder

1/2 tsp salt

1/4 tsp cinnamon

1/8 tsp all spice


Maple Icing

1 1/2 cup powdered sugar

3 tbsp pure maple extract

3-4 tbsp non dairy milk

Pinch of salt and food coloring


Instructions

Preheat Oven 350 degress F.

Start off by adding some unsweetened apple sauce into a large mixing bowl along with liquid coconut oil, plant based milk, vanilla extract and mix to combine.


Add in granulated sugar, add spices salt, and baking powder. Again mix together to combine. Once combined well, add in all purpose flour and whisk until smooth. This should resemble pancake batter and smell amazing!


Add batter into donut pan to get a dozen donuts and bake for 15-18 minutes or until a tooth pick comes out clean. Remove from donut pan and place onto a cooling rack to cool completely before icing.


The part of the donut the cooks in contact with the pan will be beautifully golden. I like to frost the lighter side.


For our icing/glaze add powdered sugar, maple syrup, plant based milk and stir until fully combined. You can add more powdered sugar for a thicker consistency and food coloring of your choice if you wish!


Dip donuts one at a time into the icing and place back onto cooling rack to allow any excess icing to drip off. Add a baking sheet underneath for easy clean up.


TIP: Top as you wish with sprinkles, icing stripes, chocolate bits, or crushed dehydrated fruit.
