Easy One Pot Vegan Pasta
I spend so much time in the kitchen. Testing recipes, making breakfast lunch and dinner for the kids so, whenever I can come up with a easy quickie recipe it's so very welcomed. How nice is it to make dinner in 20 minutes and actually end up with something hardy, healthy, and delicious!
I came up with this recipe one night on a whim. I had been editing a YouTube video all day and completely forgot to make dinner.
My poor 6 year old daughter came up to me at 7:30pm and says "mom you didn't make us dinner!" lol Whoops, after I got passed my initial feeling of guilt I said to
myself "Oh (insert expletive here) I really forgot to make dinner!" So I processed to rush into the kitchen and make whatever I can make in a rush. That's pasta a lot of times for me but I wanted to make them something really delicious to help wash away the guilt of forgetting to make dinner and that my friends is how this recipe came about!
TIP: This dish can be made for meal prepping and it can also be made with other pastas. I feel like spaghetti works best because it cooks faster, so just something to keep in mind.
1 yellow onion, diced
2 celery stalks, diced
3 garlic cloves, minced
2 carrots, peeled and diced
1lb plant based ground meat
1 tbsp tomato paste
3 cups vegetable broth
2 cups tomato sauce
1 tbsp Italian seasoning
2 tbsp fresh parsley
1 tsp dried thyme
1lb pasta of your choice
1/2 cup plant based cheese, optional
2 tbsp olive oil

Start off by adding olive into a heavy bottom pot, over medium high heat. Add in onion, 2 celery stalks, and carrots. Cook for 3-4 minutes or until onions soften. Make a well in the center and add in minced garlic. Cook for one minute.
Add tomato paste, mix and add in tomato sauce. Add in Italian seasoning, dried thyme,
onion powder, garlic powder, and salt and pepper to taste.
Stir in vegetable broth, add in plant based ground meat, fresh parsley, and pasta of your choice, spaghetti works best. Make sure pasta is covered in the broth by pushing it down. Cover and cook on low heat for 20-25 minted or until pasta is tender and all liquid has been absorbed. Make sure to stir often as pasta tends to stick to the bottom of the pan because it’s starchy.
This is optional, but you can add some plant based cheese to the pasta to make it more delicious. Serve and ENJOY!
