Simple Vegan Baked Ziti

I grew up with such a strong love for pasta! My mom would make pasta at least twice a week. Her favorite thing to make, to this day it's still lasagna which is fantastic by the way. Before, she would make it just regular non-vegan lasagna, but now she has transitioned into a more vegetarian lifestyle, so she still makes her famous lasagna but now she makes it with plant-based ground meat instead.

She actually called me the other day super excited because she had discovered Aldi's supermarket was now carrying vegan meat. No, this is not sponsored by Aldi’s, but if Aldi's you're out there and you wanna sponsor me, let a girl know.

Funny thing is I grew up eating pasta and lots of it and I'm sure I've said this before, but I'll say it again. Pasta is one of my favorite foods of all time. I can eat pasta morning noon and night, in fact I actually have done that on multiple occasions especially right now when I am trying to transfer my old blog to my new website.

I barely get enough time to make anything big and awesome so I will literally wake up in the morning and make a huge batch of any kind of pasta that I would like to have for the day and we will eat pasta all day long. Unless the kids request something different for either lunch or dinner, but they love pasta so that doesn't usually happen.

I know, the low-carb or no carb people would be quaking in their shoes to hear such a thing. But I love it, my kids love it and my husband loves it. Oh wait, that's not right he actually doesn't like pasta. But he is out numbered, so he has to eat pasta quite often because the votes are 3 to 1 haha.

That all being said everyone should have a go to easy big ziti recipe and let this recipe be that recipe for you.


8 oz ziti pasta, cooked

1/2 lb plant based ground meat

3 8oz cans of tomato sauce

1 cup jarred marinara sauce

1/2 cup water

1 aatsp paprika

2 tsp onion powder

2 tsp garlic powder

1 tsp dried thyme

1/2 tsp cumin

1 tsp Italian seasoning

1 tbsp nutritional yeast

1/2 tsp salt

1/2 tsp ground black pepper

1 1/2 cup plant based cheddar cheese


Start off by adding tomato sauce into a skillet over medium heat.

Add all seasoning, spices, and nutritional yeast to the tomato sauce and mix well.

Stir in plant-based ground meat and water. Cook on medium low heat for five minutes.

Add plant-based meat mix to cooked pasta. Mix well until everything is combined.

Next add in extra marinara sauce and half a cup of cheese. Mix again.

Add half of the mixture into a 8 x 12 casserole dish. Later on half of the remaining cheese. Add the remaining pasta followed by another layer of the rest of the cheese. 

Bake at 350° for 15 minutes or until the cheese is melted.

Remove from oven serve with a drizzle of olive oil and nutritional yeast if you like and enjoy!
