Sweet Potato Patty Buddha Bowls



A beautiful new Buddha bowl can make anyone's day! This Buddha bowl recipe here is so delicious because it has all the Buddha bowl essentials, or come to think of it we are missing a fresh veggie and toppings but still delicious and you get my drift lol! You can really enjoy this guilt free because it's healthy!



What are the essentials for a Buddha bowl you may ask...

A protein

A leafy Green

A grain

A dressing

A topping (seeds, or nuts)

A crunch (fresh veggies)



Let talk kale for a sec tho, because we have massaged kale in this recipe. When you massage kale with a bit of oil, salt and pepper. You create something special, because you didn't cook the kale down but as you massage it, it become wilted and somehow very delicious. Listen I'm no scientist but if I had to guess, there is some sort of scientific magic going on there!


Sweet Potato Patty Buddha Bowls

Prep time: 30 minutes

Cook time: 20 minutes

Total time: 50 minutes

Ingredients

1 cup kale, roughly chopped

1/2 avocado, sliced

3/4 cup quinoa, cooked

1/4 cup tahini dressing (recipe here)

2 cups sweet potatoes, baked

1/2 can chickpeas, drained and rinsed

1/8 tsp cayenne pepper powder

Salt and pepper to taste






Recipe starts at 8:06


Instructions

Take 3 cups of baked sweet potatoes and mash them up with 1/2 can of chickpeas. Add in 1/8 tsp cayenne pepper, salt and ground black pepper, or any spices of your choice. Take spoonfuls of the mix and form into patties. Place the patties into the air fryer and cook at 400 degrees farehieght for 25 minutes or until golden browned. If using a conventional oven cook for 35-45 minutes or until golden brown.


Next for the bowl, massaging some kale with olive oil, salt and pepper until wilted and assembling the bowl or meal prep container by adding the quinoa, sweet potato patties, kale, and avocado. Drizzling tahini dressing over top and enjoy!
