Strawberry Mint Cucumber Balsamic Salad
This strawberry mint cucumber balsamic salad (that’s a mouth full) recipe may seem basic but this recipe is incredibly tasty, it’s refreshing, and the perfect light salad for any day but especially for spring and summer. Personally this is one of my favorite salads of all time.
You can’t go wrong with a salad like this, it has fruit, veggies, the sweet and savory balsamic reduction dressing, with the pop of mint that really sets everything off. I am not one for fruity salads but this one is special and I really think that the mint and balsamic reduction are the glue for this salad. Balsamic and strawberries are a great pair and that’s no exception here!
Swaps
If you like you can also, swap out the strawberries for blueberries or even watermelon works great. Or try it with ranch sauce for a completely different twist. Make it your own and enjoy!

- 1 1/2 cup strawberries chopped
- 1 1/2 cup cucumber chopped
- 1/4 cup almonds sliced or slivered
- 2 tbsp mint leafs hand torn
- 1/4 cup balsamic vinager
- 1 tbsp agave

- In a sauce pan, mix in balsamic vinegar and agave. Set heat to medium and allow the mixture to reduce by half. Turn off heat.
- Toss the strawberries, cucumber, and almonds together in a salad bowl.
- Plate salad, garnish with a few extra almonds and mint.
- Drizzle balsamic reduction over top and ENJOY!
